This Gluten-Free Citrus Avocado Salad was a hit when I prepared it at a New York State Fair Wegman’s Cooking demonstration this weekend. This salad is so refreshing and delicious. It is a light salad with a honey citrus dressing that is drizzled on right before serving. It is beautiful and will be a hit at your next dinner. It is the perfect Summer salad.

GLUTEN-FREE CITRUS AVOCADO SALAD
- 3 cups green leaf lettuce1 orange, peeled to remove skin & pith,
- 1 avocado sectioned and sliced
- 1/2 cup fresh blueberries
- 1/4 cup orange juice with pulp
- 1 tsp orange zest
- 1 tsp lime zest
- 2 Tbsp apple cider vinegar
- 2 Tbsp honey
- 1 clove minced garlic
- 1/4 tsp Himalayan Pink Salt
- 2 Tbsp extra virgin olive oil
- 1/4 tsp ground black pepper
Using your hands, tear lettuce into bite-sized pieces. Place in a serving dish. Peel orange to also remove pith and section with a sharp knife. Place orange slices on top of lettuce leaving spaces for the avocado slices. Slice completely around the avocado to separate and remove the pit. Using a large spoon, remove avocado halves and slice each half. Place slices in between each orange slice. Top with blueberries.
Dressing: Combine the next 9 ingredients for the dressing in a large measuring cup. Using a whisk, combine ingredients well. Drizzle over salad. This is a very light dressing that allows you to taste each of the fruits and veggies in the dish.
