Gluten Free Chia Pudding with Banana and Peanut Butter

Chia Pudding with Banana and Peanut Butter

  • 1/2 banana, peeled1 tsp peanut butter
  • 1/2 tsp honey
  • 1 1/4 cups almond milk
  • 1/4 tsp vanilla
  • 1/3 cup organic chia seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 banana, peeled and sliced
  • 1/2 apple, chopped
  • 1/2 tsp honey

Mash together the banana, peanut butter, 1/2 tsp honey, milk, and vanilla. Stir in the chia seeds thoroughly to avoid lumps and divide the pudding between individual jars or bowls. Refrigerate overnight, or at least 8 hours. Top with cinnamon, nutmeg, banana, apple, and additional honey.

You will probably think this will never be set up because it is so runny. But it does!!!

I have slightly adjusted the recipe from Clean Cooking magazine. Gotta give credit where credit is due. You’re gonna love it!
