An Unexpected Discovery as I stumbled across the Yummylicious Cookie Company at the Fort Leavenworth Post Exchange. Jon, the Owner of Yummylicious Cookie Company, was handing out delicious samples of his gluten-free cookies. They were SO good! Let me show you before I show you what I make with their gluten-free pancake mix.
In the forefront is the Coconut Almond Chocolate Chip Gluten/Dairy Free Cookie! It is absolutely delicious! The cookie on the top right is from their Chocolate Brownie Bites Mix and then made into an ice cream sandwich! The cookie on the left is probably my favorite if I am forced to decide a top choice! It’s a peanut butter protein cookie! It has 20 grams of protein. Made with cassava flour, organic evaporated cane sugar, and dark brown eggs, chickpea flour, butter, vanilla, ground flaxseed, can sugar, whey protein, fresh ground peanut butter that Jon himself makes. Their products are wholesome and nutritious.
These pancakes are fantastic! Gluten-Free, Egg Free, Dairy Free, Vegan……..Yummylicious Cookie Company Pancake Mix is the perfect way to begin the morning! And I have to admit, these pancakes are also my favorite!!

Gluten-Free Banana Blueberry Pancakes
- 1 Cup Yummylicious Pancake Mix
- 2/3 Cup Vanilla Almond Milk
- 3 TBSP Mashed Bananas
- 1/2 tsp Pure Vanilla
- 1/2 Cup Blueberries
Blend well and add a scoop of batter to a hot iron skillet oiled lightly with Avocado Oil. Cook both sides for about 1 1/2 minutes on med-hi heat. Serve with warm mashed blueberries, maple syrup, bacon, and OJ. Makes 5-6 pancakes
