Gluten-Free Egg Salad & Caprese Salad

Caprese salad is a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and sweet basil, seasoned with salt, fresh ground pepper, and olive oil. Get in the groove of Italian with the colors of the Italian flag: green, white, and red.

This is such a fun and delicious lunch. One of my favorites any time of the year. Egg salad is super easy to prepare. Make sure you have a candle going while peeling the eggs to get help get rid of the sulfur smell in your kitchen after peeling the eggs.
 
EGG SALAD FOR TWO

  • 4 hard-boiled eggs
  • 1/4 cup sliced pimento filled green olives
  • 1/2 cup gluten-free mayo (more or less depending on your preference)
  • Pinch of salt and pepper
  • Romaine lettuce leaves

 
Chop hard-boiled eggs in a bowl. Add olives and mayo and mix well. Place romaine lettuce leaves on a plate and add a scoop of egg salad.
 
CAPRESE SALAD FOR TWO
 

  • 1 fresh mozzarella cheese log,
  • Pre-sliced
  • Ripe tomato
  • Fresh basil leaves
  • Caramelized garlic olive oil
  • Pinch of salt and fresh ground pepper

 
Alternate two or three slices of mozzarella and tomato along with fresh basil leaves on an angle on a plate. Drizzle with caramelized garlic olive oil and top with the desired amount of salt and pepper.
 
Waa-laa…..a fun and nutritious gluten-free lunch or a light dinner in the summertime. Use freshly picked summer tomatoes from your garden or pick some up at a local farmer’s market. It’s a win-win!!
