I used to love making this recipe using saltine crackers. You remember eating saltine crackers, right!? I miss them so much! But never fear, a replacement is here!!!! You and your friends will never know these are gluten-free. Sweet, buttery, chocolatey, and salty all on a bite-sized cracker! Holy Moly these are GOOD!!!
I now make these using gluten-free crackers. I use an entire package of Gluten-Free Schär Entertainment Crackers. The photos below are right after I have poured the sugar mixture over the crackers before baking and right after I pulled the pan out of the oven.
Gluten-Free Sweet Crackers
- Crackers (Place on top of the foil, lined up as close as possible)
- 1 cup butter
- 1 cup light brown sugar
- 1/4 cup mini chocolate chips
- 1/2 cup chopped walnuts
Line a 9×12 inch pan with foil (which is a must or you will have a mess). Preheat oven to 350 degrees. Place butter and brown sugar in a microwaveable safe 4 cup measuring cup. Melt butter and brown sugar in the microwave for 5 minutes. Will be all bubbly, do not stir. Immediately pour mixture over crackers. Scrape out what’s left and place it on crackers. Next, sprinkle chocolate chips and then walnuts over top. Bake for 8 minutes until bubbly and just beginning to get golden brown. Do not overbake. These definitely will burn easily, so watch closely! Cool for only about 4 minutes and then separate into individual crackers. If you wait much longer than 4 minutes, the crackers will all be stuck together and will break into many pieces when trying to separate.

Oh, by the way, these make GREAT teacher’s gifts! Put these lovelies in a clear cellophane bag with a pretty ribbon tied around the top. The teachers won’t be able to wait to bring them home. They will be devoured before the end of the day! So I am told!!
