This is a wonderful dish to bring to any potluck or holiday dinner! It is delicious and a favorite of so many. It goes so well with turkey or ham. Be prepared to take an empty dish home!
Gluten-Free Sweet Potato Crunch Casserole
- 1 (40 oz) can yams OR 3 cups cooked, mashed sweet potatoes
- 1 egg, slightly beaten
- 1/2 cup sugar
- 1/2 cup milk
- 1/2 tsp salt
- 1 tsp vanilla
Mix all ingredients together and pour into a greased baking dish. Cover with crunch topping.
Crunch Topping
- 2/1/2 tbsp butter
- 1 cup light brown sugar
- 1 cup chopped pecans
- 1/3 cup gluten-free flour
Melt butter and mix in brown sugar, chopped pecans gluten-free flour, and put on top of the casserole. Bake at 350 degrees for 45 minutes.
