Betty Crocker Gluten-Free Cupcakes

I just love gluten-free Betty Crocker yellow cake mix for cupcakes! They are so moist and quick to prepare. Top with gluten-free buttercream frosting and no one even knows they are gluten-free! They are so delicious and you can even eat them several days later and they taste just as good as the day they were made!

Buttercream Frosting

(for 12 cupcakes)

  • 3 TBS butter, softened
  • 4 cups confectioners sugar
  • 1 tsp vanilla
  • 3-4 TBS milk (just enough to be spreadable, not runny)


Mix all ingredients together at medium to medium-high speed until smooth. This mix makes 12 cupcakes. I use a gravy ladle to spoon batter into the cupcake pan. No mess!  They are so yummy!!!
