Gluten-Free Potato Pancakes

I LOVE eating homemade potato pancakes. Some people like to top them with applesauce, but I prefer to top mine with maple syrup. I know, I know it sounds weird, but you should try it. And I like my potato pancakes a bit crispy on the edges. Such comfort food!!!  I hope you enjoy the recipe.

Potato Pancakes (makes 6 potato pancakes)

  • 1 1/2 cup mashed potatoes
  • 1 egg (lightly beaten)dash of salt and pepper
  • 2 TBS chopped sweet onion
  • 2 TBS olive oil applesauce/maple syrup to serve with pancakes


Add the first four ingredients and mix well by hand. Heat olive oil in skillet. Place 2 tablespoons of mashed potatoes in the skillet to make one pancake, and slightly flatten. Make additional pancakes. Watch closely to flip when the pancake begins to brown. Let pancake brown on the other side as well. When desired wellness is achieved, place the pancake on a paper towel to brown. Serve warm with applesauce or warm maple syrup along with some fresh fruit.
