Gluten-Free Corn Salad
- 6 cups Romaine lettuce
- 1/2 – 1 cup gluten free mayonnaise
- 1 green pepper, diced
- 2 cups cheddar cheese, shredded
- 1 Vidalia onion
- diced gluten-free bacon, fried, drained & chopped
- 1 can corn, drained or fresh from the cob
Layer in your favorite oblong casserole dish in the order listed above, lettuce on the bottom. Adjust quantities if you would rather use a smaller-sized dish. Best if you make it ahead, but works fine to make and serve immediately. Serve with freshly sliced tomatoes.
