Such a great way to encourage conversation when your kiddos come home from school. When I would come home from school my mom sometimes would have freshly baked homemade peanut butter cookies for my after-school snack. I would smell the aroma as I walked into the garage from outdoors and then on into the house. The cookies would be sitting on the kitchen table along with hot tea in a china teapot with two cups and saucers. We would have hot tea and cookies while she asked me about my day. Such a sweet memory for me. It was definitely my “happy place” and I am thankful I have these special memories. I wish she was still here so we could enjoy this gluten-free version together.
Peanut Butter Cookies
- 1 cup gluten-free peanut butter
- 1 tablespoon1 TBS salted butter
- 1 cup sugar
- 1 egg
Combine all ingredients in a bowl using a mixer until combined. Roll into walnut-sized balls, place on a greased cookie sheet, and flatten with a fork making a criss-cross design. Bake at 350 degrees for 6-8 minutes depending on how crispy you like your cookies.
