We enjoyed this delicious breakfast while staying at a rental cabin in Pigeon Forge. A nice a hearty breakfast while the weather was a bit cold and rainy. I LOVE eating homemade potato pancakes. Some people like to top them with applesauce, but I prefer to top mine with maple syrup. I know, I know it sounds weird, but you should try it. A delicious gluten free breakfast which includes some of my favorite summertime fruits. Hubby and I went blueberry picking this week. The berries were almost too ripe!
