I just love gluten free Betty Crocker yellow cake mix for cupcakes! They are so moist and quick to prepare. Top with gluten free butter cream frosting and no one even knows they are gluten free! They are so delicious and you can even eat they several days later and they taste just as good as the day they were made!
Buttercream Frosting (for 12 cupcakes)
3 TBS butter, softened
4 cups confectioners sugar
1 tsp vanilla
3-4 TBS milk (just enough to be spreadable, not runny)
Mix all ingredients together on medium to medium hight speed until smooth.This mix makes 12 cupcakes. I use a gravy ladle to spoon batter into cupcake pan. No mess! They are so yummy!!!
