Gluten Free Corn Salad
6 cups Romaine lettuce 1/2 – 1 cup gluten free mayonnaise
1 green pepper, diced 2 cups cheddar cheese, shredded
1 Vidalia onion, diced gluten free bacon, fried, drained & chopped
1 can corn, drained or fresh from cob
Layer in your favorite oblong casserole dish in the order listed above, lettuce on the bottom. Adjust quantities if you would rather use a smaller sized dish. Best if you make ahead, but works fine to make and serve immediately. Serve with freshly sliced tomatoes.
